The link below leads to a small book, written by a member of a Taylor family in Delaware County, New York, where the Catskills are beginning to flatten out. These Taylors might be related to you all through Harriet Taylor, the wife of Nathan Jordan, John W Jordan's brother. A connection is possible due to the geographic nearness, but I'll probably not prove it. That's not why it interests me.
It isn't an exciting read, but it describes very well the lives, self-sufficiency and strength of those people, and could very well apply to most of our New York State pioneers who lived similar lives in the same times in the Catskills and Shawangunks. Pay attention, because history sometimes repeats itself, just don't pay too much attention to the old boy's politics.
